Steep, sweet pine nut balls

The pine nuts are the seeds of the pine cones of the stone pines, those that squirrels like so much. This dried fruit has a extremely high concentration of nutrients such as proteins and carbohydrates, calcium, magnesium and iron. Like all nuts, they can be eaten raw or roasted. Its conservation is approximately one year if it is in an airtight container and in a cool and dry place, away from heat and humidity.

In the kitchen they are used both in savory and sweet dishes. They are very rich with spinach accompanied by raisins and also have a place in garnishes and sauces for meat and fish along with other nuts. In desserts and cakes they can be combined with creams such as cream, ice cream, chocolate or sky bacon.

The steeples are made up of a kind of marzipan with egg yolk that is covered with pine nuts.     The recipe is not complete. One egg yolk is not enough with so many dry ingredients. I would have loved to try these balls but they have not turned out well.

      Hi Margaret:
      Actually the steepings are simple to do but everything has its trick. In my house, for example, the egg is not used in the dough, it is only used to add shine.

      The trick is to know the exact point of the dough a little. All you have to do is grind and mix the ingredients. Then take a small portion, if it is handled well you can make balls with the rest.

      If it crumbles and you can't "roll" that test portion, you can add a tablespoon of water to the dough to make the ingredients stick together. You can also add a little cooked potato or sweet potato, that will make it even easier for you.
