Strawberry mousse cake, to surprise your guests

Preparation

1. Wash the strawberries, remove the leaves and reserve a few to decorate at the end. The rest crush them until you get a puree. Add 25 grams of sugar and continue grinding until the puree is compact.

2. Put the homemade cake in a mold and leave it as a base.

3. Put the other 125 grams of sugar and the egg yolks in a saucepan. Beat vigorously until foamy (help yourself with an electric mixer if you see it necessary). Add the milk and mix everything well. Heat the mixture over low heat, stirring constantly to prevent lumps from forming. Before it boils, remove it from the heat.

4. Soak the gelatin sheets in cold water for about 5 minutes until soft. Drain and add to the mixture, beating until dissolved. Put the mixture in a bowl and let it cool for a couple of hours in the fridge so that it sets properly.

5. Once we have the curdled mixture, add the strawberry puree and the whipped cream and pour the entire mixture into the mold on the sponge base, decorating with strawberries on top. Leave it in the freezer covered with plastic wrap for a couple of hours.

6. Once ready, unmold it and cut it into squares. Serve it in small glasses for each of your guests.
