Baked stuffed onions with mushrooms, cheese and cherry tomato

Preparation

1. The first thing we will prepare are the onions so that they are ready as a container for the filling. Peel and clean them, cutting their base a little so that they can hold and carefully empty them. To make it easier for you to cook them, prepare them in a pan with a finger of water. Add the onions and keep them covered cooking for about 20 minutes.

2. You will see that once we have cooked them and those 20 minutes have passed, they are not fully cooked and that they are somewhat crunchy. That is its perfect point, so that later they finish cooking in the oven.

3. Once we already have the onions cooked and heartless, we leave them prepared on the oven tray while we prepare the filling.

4. For the filling, the best advice for the little ones to eat the vegetables without question is to cut the celery and carrot very finely.
   Prepare a little olive oil in a pan. Let it heat up and add the finely chopped onion, celery and carrot. We let them strike out, and we put a little salt and pepper on them. When they are almost cooked, add the sliced ​​mushrooms and let them cook with the rest of the vegetables. When we see that it is ready, we add a splash of white wine and let the alcohol evaporate. At that time we add the cherry tomatoes cut in half and cook for about 15 more minutes.

5. With the help of a spoon, we are filling each of the onions and crowning them with a little grated cheese, so that it melts with the rest of the ingredients. We preheat the oven, and when it is hot add the onions and let them bake for 25 minutes at 180 degrees.
