Ingredients
- 250 gr of mushrooms
- 2 tablespoons olive oil
- Half an onion in strips
- 4 fillets of Iberian pork prey
- Sal Island
- Black pepper
- Parsley
Preparation
Season the prey fillets with the parsley and leave them fully extended. Clean the mushrooms and onion and cut them into cubes and strips.
Preheat a frying pan with a little olive oil, add the mushrooms and onion and cook until golden. Once you have them season, and leave them reserved.
Carefully tenderize the meat and top with the mushrooms mixed with the onion. Roll and squeeze so nothing escapes. Seal each roll with a toothpick or butcher's string.
Preheat a frying pan to a very high temperature, and brown each of the rolls by putting a little Maldom salt on top of the meat, to seal it. Then, bake for 20 minutes in the oven at 180 degrees.
