I was thinking about what dessert to make for this Christmas Eve. It occurred to me to make a Banoffee, easy to make and convenient to serve if there are many guests we have at home. Perhaps this banana and dulce de leche cake is something cloying at night and after a succulent dinner. So I decided Rephrase the recipe to make it a little more refreshing. Let's see how!

4 medium and slightly ripe Canarian bananas
700 gr. condensed milk
1 lemon (its skin and the strained juice)
1 lime (its skin and its strained juice)
Yolks 2
2 tablespoons sugar
4 tablespoons unsalted butter
1 package of Maria or Digestive type cookies
120 gr. butter for cookie dough
250 ml. whipped cream
cinnamon powder

Preparation

To make the biscuit base, we crush the biscuits in a mortar or in a grinder. Put the resulting powder in a bowl, add the softened butter and a little cinnamon and mix with your hands until you get a compact and sandy dough. We put this paste in a round mold, smooth with the back of a spoon and raise the edges a little. Let the dough harden in the fridge.
In a saucepan, beat the egg yolks with the sugar and the citrus juices and skins. We take it to the low fire and, without stopping stirring with some rods, we wait for it to thicken and make a cream. Then, we add the butter and integrate it. We wait for the cream to cool down.
Add the condensed milk and stir well to obtain a creamy and homogeneous mixture.
Cut the bananas into thin slices and place them on top of the cookie base.
Pour the condensed milk over the banana. Cover with transparent kitchen paper, without touching the cake, and put it in the fridge. We let the cream firm for at least 6 hours, although it is better to do it the day before. We can also prepare it in individual containers, if we want the dessert to solidify before.
We whip the cream with a little sugar and lemon zest and cover the cake with it. Sprinkle with cinnamon and serve.
