For hot days when we feel like eating delicious and cool, this Piña Colada Mousse is the perfect dessert.

Ingredients

6 pineapple slices
1 glass of coconut milk
2 glasses of liquid cream
4 eggs
6 gelatin sheets
cinnamon
shredded coconut
sugar to taste

Preparation

First we reduce the coconut milk a little over low heat in a saucepan until it is thick together with two tablespoons of sugar
we let it cool
With the pineapple, we make a fine puree by crushing it in the blender and straining it with the Chinese.
Next we separate the whites from the yolks and mount them until stiff together with four tablespoons of sugar
We do the same with the cream, also sweetened.
Hydrate the gelatin sheets and dissolve them in a little hot coconut milk or a little pineapple juice
Carefully mix the gelatin with the cold coconut milk and add it to the pineapple puree
Add cinnamon and mix with the egg whites and whipped cream
We take to the refrigerator several hours until it sets.
