Ingredients

  • 2 Persimmon persimmons
  • 1 broken pasta sheet
  • 1 lemon (its grated skin and the juice of half)
  • 55 gr. brown sugar
  • 15 gr. of butter
  • 200 ml. pastry cream

Preparation

  1. Cut the persimmons into thick slices and confit them over high heat for 3 minutes in a pan together with the lemon, its juice and the sugar.

  2. Place the persimmons in a tart pan, covering the bottom well.

  3. Spread the pastry cream carefully with a spoon or palette and spread the dough over this filling, covering the cream and persimmons well.

  4. Bake at 200 degrees for 10 minutes until the dough is golden brown.
