Ingredients

a sheet of frozen puff pastry
three eggs
250 grams of ricotta
150 grams of fresh goat cheese
50 grams of grated Parmesan
a red endive and 30 grams of pitted olives.

Preparation

Wash the endive, cut it into quarters, remove the base and cut the rest into strips
We preheat the oven to 220º
Mix the ricotta with the Parmesan, the fresh cheese, the eggs and the chopped endive until obtaining a smooth and homogeneous mixture.
Line a removable mold about 25 centimeters in diameter with the thawed puff pastry sheet, prick with a fork several times and distribute the cheese mass on top.
Plunge the olives into it and bake the cake for 15 minutes.
Lower the temperature to about 180ºC and cook for another 15 minutes.
