Ingredients

  • 4 eggs
  • 2 tablespoons grated cheese powder
  • 1 splash of liquid cream
  • ground pepper
  • shawl
  • olive oil

Preparation

  1. We take three eggs and separate the whites from the yolks. We beat those yolks with the other whole egg, the grated cheese and a little salt and pepper until foamy, that is, slightly assembled.

  2. In a separate bowl, we beat the egg whites until stiff with an electric whisk.

  3. Then, we pour the beaten egg yolks into the whipped whites and carefully mix them with a spatula or wooden spoon with enveloping movements, taking care not to reduce the volume of the mixture.

  4. In a large non-stick frying pan add two tablespoons of oil and when it is hot add the mixture of egg whites and yolks with cheese. We let the tortilla curdle on the bottom side over moderate heat so that it acquires a beautiful color. The top should still be a bit creamy.

  5. It is time to pour our filling over the tortilla. Fold the tortilla in half, cover the pan for a minute and serve the tortilla immediately.

Notes

Cooking note: This tortilla is not flipped, its upper part is cooked by the heat that comes from the bottom of the pan. The soufflé omelette must be served as soon as we remove it from the pan. At room temperature, it loses its grace, that is, volume and fluffiness.
