2 sheets of empanada dough
500 gr. fresh tuna or bonito
1 cebolla great
1 garlic clove
1 red bell peppers
1 green peppers
200 ml. grated or crushed tomato
a bit of sugar
olive oil
shawl
I beaten egg

Preparation

Cut the onion and peppers into fine julienne strips and chop the garlic.
Slowly poach the vegetables in a pan with oil and a pinch of salt. When they are soft, add the tomato and let the sauce cook, stirring from time to time, until it is very red and concentrated.
We rectify the acidity of the sauce with a little sugar if necessary.
Add the shredded and drained tuna, stir well and remove from heat. If we see that the sauce continues to have juices, we remove them so that they do not spoil the empanada.
We roll the dough sheets to make it thin.
We place one of them on a baking sheet covered with non-stick paper and distribute the filling on top.
We close with another layer of equally thin dough and close the edges joining both sheets and pinching them inwards.
Prick the surface with a fork and bake the empanada at 170 degrees for about 40 minutes or until golden.
