250 g cheese
3 pears
2 small chives

Preparation

First, we cut the pears into cubes and boil them until they are tender.
We drain them very well and put them on absorbent paper.
Chop the chives with the food processor and brown them in a little oil.
Add the pears and sauté for a few minutes. Season with salt and pepper and add, once off the heat, the ricotta.
We mix.
Now we take the squares of pasta from each ravioli and fill them with a dot of the dough.
We cover with another of the same size and we close them well with a fork and if we want sealing with beaten egg.
Boil until the ravioli float and add the sauce hot.
