Aubergines stuffed with ham and cheese, also as an aperitif

This fried eggplant recipe is easy and the kids are going to love it. If you want to make the dish more sweet, bathe it with a little honey, such as typical Cordoba recipe of aubergines.

This recipe works well as a main dish if we add a garnish, but it is also suitable as an aperitif.

Last night I made that recipe but when I fried them in very hot oil, the aubergine came out a little raw, as it is hard.
What can I do so that it does not come out so hard or raw?
    How do you do it?
    Greetings and thank you.

Try to cut them not very thick and fry them in hot oil, but not too much so that, apart from browning, they can be cooked inside.
