We place a whole, clean chicken on a tray and we will accompany it with some sliced potatoes, in the format of "Baked potatoes". Then we will add certain seasonings to give it that special touch.

Ingredients
- 1 whole chicken
- 1 kilo of potatoes
- 1 large chive
- 1 lemon
- 1 beef broth cube
- 40 g olive oil
- 1 handful of pickled onions
- 6 roasted and canned piquillo peppers
- Water
- Fresh parsley
Preparation
We have the chicken, cleaning it well so that it does not contain any feathers and season with salt. We take a large baking tray and pour a splash of oil on its surface. We place the chicken face down.
We peel the onion and potatoes and wash it well. We cut everything into slices and place them around the chicken. We cut the lemon into several pieces and place it on the tray. We also add the crumbled chicken broth cube.
We sprinkle salt and pepper on the potatoes. Pour a splash of olive oil over the chicken and potatoes. We pour water until the potatoes are almost covered.
We put it in the middle of the oven and We program 220° with heat up and down.
When the back of the chicken is browned, turn it over and continue baking. When we see that it is a little golden, we will add the whole piquilo peppers and the pickled onions.
Crush the garlic in a mortar and pour water into the mortar. We pour this mixture over the chicken and bake again. We wait for it to brown completely and we can now remove it from the oven.
We serve the chopped chicken with a garnish of potatoes, pepper and chives.
