Now, a stew of white beans with potatoes does not appeal as much as in the colder months. Therefore, we have prepared a Bean salad with simple and light ingredients that we can serve with our favorite mashed potatoes.

Ingredients
- 240 g of canned beans
- 140 g corn
- 10 gherkins in vinegar, the tiny ones
- 12 pitted black olives
- 100 g of peeled natural tomato
- Manzana 1
- A splash of lemon juice
- 2 eggs
- Sal Island
- Freshly ground pepper
- Olive oil
- Mashed potatoes
Preparation
We put the eggs to cook in a saucepan with water and a little salt. They will be ready after approximately 15 minutes.
We put the beans in a large strainer and pass them under cold water. Put the beans in a large bowl.
We put the corn in that same bowl (without the canning liquid). Also gherkins and black olives.
Peel and chop the tomato. We peel and chop the apple. Pour a splash of lemon juice over the apple.
When the eggs are cooked, remove them from the saucepan and wash them with cold water. After a few minutes, we peel and chop them. We put the egg in pieces in the bowl where we have the rest of the ingredients.
Season our salad with salt, a little pepper and olive oil.
On each plate we put a few tablespoons of mashed potatoes. We make a hole in the center and fill it with a few tablespoons of our salad.
