Cold peach cake: more fruit, more colorful

With some peaches ripe, sweet and aromatic we are going to prepare a fresh cake for this summer that is already coming. To make it more attractive we can include some pieces of fruit such as strawberries, grapes or cherries.

Ingredients

  • 2 sponge sheets
  • 2 water glasses
  • 2 glasses of peach juice
  • 200 grams of sugars
  • 500 grams of whipping cream
  • 4 ripe peaches
  • 8 gelatin sheets.

Preparation

  1. First of all, wash the peaches well and peel them, reserving the skin.

  2. Mix the glass of water with half the sugar and the juice and boil the skins for about five minutes along with two of the whole peaches

  3. Reserve the broth, discard the skins and cut the peaches into slices.

  4. Meanwhile we drunk the two sheets of sponge cake with half of the peach juice from cold cooking.

  5. Cut the other two peaches that we have into pieces and crush them

  6. Whip the cream with the rest of the sugar

  7. Melt 4 sheets of gelatin hydrated in cold water in a bit of the lukewarm peach broth and mix it with the puree and the whipped cream.

  8. Place a sponge base in the bottom of a round removable mold and cover it with the cream

  9. Let it set in the fridge for a couple of hours

  10. Once cold, we put the other cake plate on top and distribute the fruits and peach segments on top.

  11. Finally, we dissolve the rest of the hydrated gelatin in cold water with the reserved peach juice and paint the fruit with this preparation.

  12. We put the cake back in the fridge so that we have a shiny surface.

    How much is the gram measures in cup, and a glass ????

      They are about 250 grams :)
