I recently read that one of the richest croquettes there is are those made by Paco Roncero, with broken eggs.

And I have done them my way, with my croquettes bechamel, a couple of fried eggs and some french fries.

We have been very good. With those ingredients it could not be otherwise. Of course, I already tell you that it is not a diet recipe.

French fries and fried eggs croquettes

Some special and delicious croquettes

For the batter:

We start the recipe by peeling and chopping the potatoes.
We fry them in abundant oil. Once fried, we remove them to a plate covered with kitchen paper and let them cool.
In that same oil we also fry the two eggs and reserve them.
We prepare the bechamel. To do this, we melt the butter in a large pan. Next we add the onion and sauté it.
It will stay like this.
We add flour.
We cook it for a couple of minutes.
Little by little we are adding the milk, while stirring, until the béchamel thickens.
We add salt and a little nutmeg.
Let it warm for a few minutes.
Add the potatoes and eggs. We chop the eggs.
We mix well.
We let our croquettes dough cool well spread out on a tray or even in the same pan.
Once cold, we form them with a couple of spoons or as we are used to making them and we pass them through a mixture of egg and milk and then in breadcrumbs.
We fry them in abundant oil.
