I have found some Eggplants in the fridge and I told myself ... How can I take advantage of them with an easy recipe that I can make in the blink of an eye? So I kept fiddling with the fridge and realized that I had cottage cheese and tomato… Good mix !! So I got to work preparing these delicious eggplant rolls with tomato and cottage cheese.

Preparation
