Ingredients
- -6 hake loins
- -1 medium onion
- -Half medium red bell pepper
- -Half medium green pepper
- -2 cloves of garlic
- -A medium carrot
- -2 small bay leaves
- -350 g of homemade fried tomato
- -60 ml of olive oil
- -Salt
Preparation
We peel the onion and cut it into small pieces. we peel the garlics and we also cut them into very small pieces.
We cast the oil in a frying pan or wide casserole and when it is hot add the garlic and onion.
Clean the peppers and cut them into small pieces. Clean the carrot, slice it lengthwise and make very thin sticks with the knife.
When the onion is half cooked, add the bell pepper and carrot and add a bit of salt.
Cover the sofrito with a lid and leave fry 5 minutes.
Add the tomato sauce and the bay leaves, stir well and fry again over medium heat for 3 minutes.
Add the hake loins, sprinkle salt on each of them and pour the sauce from the sauce on top. Cover again and let cook over medium-low heat. for 5 minutes.
