Ingredients
- -6 hake loins
- -1 medium onion
- -Half medium red bell pepper
- -Half medium green pepper
- -2 cloves of garlic
- -A medium carrot
- -2 small bay leaves
- -350 g of homemade fried tomato
- -60 ml of olive oil
- -Salt
Preparation
- We peel the onion and cut it into small pieces. we peel the garlics and we also cut them into very small pieces.
- We cast the oil in a frying pan or wide casserole and when it is hot add the garlic and onion.
- Clean the peppers and cut them into small pieces. Clean the carrot, slice it lengthwise and make very thin sticks with the knife.
- When the onion is half cooked, add the bell pepper and carrot and add a bit of salt.
- Cover the sofrito with a lid and leave fry 5 minutes.
- Add the tomato sauce and the bay leaves, stir well and fry again over medium heat for 3 minutes.
- Add the hake loins, sprinkle salt on each of them and pour the sauce from the sauce on top. Cover again and let cook over medium-low heat. for 5 minutes.
