How to make homemade tigretones

Preparation

1. We start by heating the oven to 180 °. While we are preparing the plate for the cake. We will choose one square low tray of 34 x 22 cm approximately and we cover its base of baking paper.

2. In a bowl we add the 4 eggs, the 100 g of sugar and the tablespoon of vanilla essence. We begin to beat it until it doubles its volume and is a thick and whitish mass.

3. Next we take the 75 g of flour, the 25 g of cocoa powder and a pinch of sal. It is important that we pour it sifted and when mixing it we do it carefully and with enveloping movements so that the mixture is not lowered.

4. Now we can put it on the tray, tap it against the table to remove any possible bubbles and introduce it in the oven about 10 minutes.

5. We take our griddle out of the oven and we let the cake warm.

6. When it's almost cold we cut it in half and roll it up with its own paper oven, it will be much easier. By having the cake rolled up later, it will be much easier to reshape it. We let it rest while we prepare the filling.

7. In a bowl we put the 500 ml of cream together with 100 g of sugar and we beat it. When it is assembled we add Philadelphia cheese and we beat again.

8. We unroll the sponge sheets and we add the filling. First we put a thin layer of Strawberry jam and then the cream and cheese mixture. Very carefully we re-roll and we fix it with some toothpicks. We put it in the refrigerator to set and cool everything together.

9. In another bowl we are going to prepare the coverage. We chop the 250 g of chocolate, 250 ml of cream and 25 g of butter. We are going to undo it and we can do it by heating it in the microwave at low power now 30 second intervals.

10. Let's stirring with a spoon at each interval until you see that it acquires a liquid texture. We can also do it in a water bath.

11. We take out the rolled cakes and cut them into cupcakes. We immerse them in our melted chocolate and we let them rest. We can put them in the fridge so that they set completely and faster. Once hardened we will have them ready for consumption. They must be kept in the refrigerator.
