Lamb is one of the meats that we most often serve on Christmas menus. The leg, one of the juiciest and meatiest parts of the lamb, can be stuffed in various ways once boneless. U.S we have resorted to the mix sea and mountain (meat and seafood) to prepare a rich farce for this lamb roast.

1 boneless leg of lamb
Manzana 1

100 gr. peeled prawns
orange or tangerine zest

Preparation

Season the leg of lamb with salt and pepper on both sides and brush it with oil. We reserve in the fridge.
To make the filling, we mix the very finely chopped apple, the raisins, the citrus zest, the chopped raw prawns, the beaten egg and a little breadcrumbs to make it consistent. Season with salt and pepper and spread the filling over the open leg of lamb.
We close the meat in the form of a roll, squeezing tightly, and wrap it in baking paper, closing it as if it were a candy.
We cook the leg in the oven preheated to 200 degrees for about 30 minutes.
After this time, remove the paper from the legs being careful not to burn ourselves, add a sprig of rosemary and continue baking for another 20 minutes so that they brown. We will water them from time to time with a preparation of wine, juice and broth. It is also good to put a bowl with water in the lower part of the oven to create humidity.
Once the leg is ready, we cut it into slices and serve it with the cooking juices, which we can pass through a strainer and bind this sauce with a little thickener.
