4 medium potatoes
½ teaspoon salt
4 eggs
Breadcrumbs for breading
Flour for breading
Olive oil for frying
450 gr of minced meat
Half chopped onion
1 green bell pepper, chopped
1 clove of minced garlic
1 teaspoon of salt
1 teaspoon ground pepper
4 tablespoons of tomato sauce
A few cubes of smoked bacon
A splash of white wine

Preparation

Peel the potatoes and boil them until they are well cooked. Once they are soft, mash them and add a little salt.
While the puree is cooling, we are going to prepare the minced meat.
Sauté the onion and pepper in a pan in oil. When they are golden, add the garlic, the meat, the bacon cubes, and sauté everything. When the meat is golden, add the fried tomato and a splash of white wine and let it reduce for about 10 minutes.
Once we have both the meat and the mashed potato ready, take some of the mashed potato and shape it into a ball, but in half, make a small hole with your fingers and put some minced meat. Then take some more mash and complete the ball.
Now take each ball and dip it into the beaten egg and then dredge it in the flour. Once you have it, pass it through breadcrumbs and place each of the balls on a plate. When you have them all ready, let them cool in the fridge for about 2 hours.
Put about two fingers of olive oil in a pan and let it heat up. Fry each of the bombas on both sides until they are golden brown. Once ready, let the excess oil drain on some kitchen paper.
Accompany them with a little salad, they are delicious!
