250 ml. of extra virgin olive oil
300 gr. sugar
150 gr. of butter
1 tablespoon ground cinnamon
1 tablespoon of sesame seeds
some ground ginger
some ground cloves
10 gr. baking powder
500 gr. Of flour
2 + 1 eggs

Preparation

Mix the butter with the sugar until well combined. Add the spices and then the sifted flour together with the yeast. We mix well.
Then we add two eggs, the oil and continue mixing until obtaining a homogeneous mass.
On a tray with baking paper, we are placing small portions of dough flattened to form the cookies. We can also extend the dough and cut it with cookie cutters. Between one biscuit and another we will leave a small separation since during cooking they grow a little, so we prevent them from sticking to each other.
We beat the remaining egg and paint the cookies. We cook them in a preheated oven at 155 degrees until they are golden brown. When they are ready, remove them from the oven and let them cool on a wire rack.
