We are going to prepare a simple stew of Potatoes With Cod to enjoy with the family. We will use desalted cod and cook it with natural tomato and green olives.
We will not take long to develop it. Poach the onion and the garlic won't take long and then we'll just have to seal the cod and cook the potatoes.

Potatoes With Cod

Ingredients
- Desalted cod
- Potatoes (5 or 6 units)
- About 150 g of natural tomato
- 10 large green olives, pitted
- 1 medium onion
- 1 garlic clove
- 4 tablespoons of extra virgin olive oil
- Sal Island
- Aromatic herbs (dried or fresh)
Preparation
We chop the desalted cod previously.
We chop the garlic and onion.
We fry it in olive oil.
We seal the cod, passing it a couple of minutes on each side.
After a few minutes, we turn it and add the dried aromatic herbs.
Add the white wine and let it evaporate. About 10 minutes will be enough.
We chop the tomato and the olives.
We incorporate them into the stew.
Peel and chop the potatoes.
After a few minutes we add them to our stew. Add hot water (it is not necessary to cover all the potatoes) and let them cook for 20 minutes, with the lid on and at medium heat.
We adjust salt.
Let stand a few minutes and serve.
