We love carbonara. In this case we have prepared it with a mushroom loaded with flavor called portobello. We will also put some bacon cubes that we will brown well in the first step of the recipe.
To do this bacon and egg we will use egg. It is important that, when you put it in the pan, all the ingredients (the pasta, the bacon ...) are very hot. What do you not trust in this step? Well, keep the pan on the fire for a few minutes once you have thrown the egg. It will not be as creamy but you will also get a great paste.
And if you like simple and traditional recipes, don't stop making these spaghetti aglio, olio and peppermint. You will love them.
Portobello and bacon carbonara
Great pasta carbonara with portobello mushrooms and bacon

Ingredients
- 100g diced bacon
- 1 large portobello mushroom
- Sal Island
- A dash of extra virgin olive oil
- 320 g of short pasta
- 1 hoja de laurel
- Water for cooking pasta
- 2 eggs
- Pepper
- 20 g of Parmesan cheese (to grate)
Preparation
We put the bacon in a non-stick pan, without oil.
Sauté it over high heat until it releases all the fat and is golden.
We remove the bacon pieces and discard the liquid (the bacon fat) that has remained in the pan.
We clean the portobello mushroom with a damp cloth and put it on a table.
We cut it into thin slices.
We wash the pan and put in it a drizzle of extra virgin olive oil. Sauté the mushroom that we have laminated in that oil.
After a few minutes we take out the slices and reserve them together with the bacon.
To cook the pasta, put water with a bay leaf in a large saucepan. We put it on the fire and, when the water starts to boil, we add the salt. After a few minutes we add the pasta and cook it for the time indicated by the manufacturer.
When it takes a few minutes for the cooking to finish, put the bacon and the portobello slices that we had reserved in the pan. We put the pan on the fire.
When the pasta is cooked, we drain it slightly and add it immediately to the pan that we have on the fire.
In a bowl we put the two eggs. Add the salt, pepper and grated cheese.
We mix well.
We turn off the heat and add the egg and cheese mixture that we have just prepared into the pan. Mix well and serve immediately.
Notes
If we stay calmer, once we have poured the beaten egg into the pan we can leave it on the heat for a few minutes, so that the egg reaches a higher temperature. [br]If we do it as explained in the recipe, it is important that the pasta is freshly cooked and that all the ingredients in the pan are at a high temperature.
