Today's is a recipe cuisine and on Sunday: roasted lamb shoulders.
We will do them with lard, white wine and little else ... The heat of oven will take care of the rest. Of course, do not forget the potatoes and put a little onion ...
And as an accompaniment I suggest this summer salad with yogurt sauce.
Roasted shoulders
A perfect barbecue for any celebration.

Ingredients
- 2 shoulders of lamb
- Sal Island
- Lard
- 5 potatoes
- Onion
- 1 glass of white wine
Preparation
We preheat the oven to 170º.
We spread the tray with butter and put the potatoes on it in pieces, with a nut of butter.
We salt the potatoes.
On the potatoes we put the meat, also with bits of butter on it. We also put some pieces of onion, as seen in the photo.
We put the tray in the oven preheated to 170º and keep it at that temperature for approximately 2 hours, although it will depend on the size of the shoulders and the oven.
Next we add the white wine and, after approximately 15 minutes, we raise the oven temperature to 200º. We will keep it at that temperature until the shoulders are golden brown.
