We can accompany chicken fillets with practically anything. It is a very grateful type of lean meat. During these months I have given you several chicken recipes with ideas on how to make the chicken breasts stuffed with spinach and cottage cheese, chicken breasts stuffed with tomato sauce, or chicken fillets stuffed with enmental cheese. Today we are going to prepare a variant of these fillets, because the stuffed breasts that we have ready for today, come with piquillo peppers and blue cheese. Delicious and very tasty!

- 4 chicken breasts
- 200 gr of Serrano ham
- 200 gr of cheese for sandwich
- 100 gr of blue cheese
- 100 gr of piquillo peppers
- Sal Island

Preparation
Preheat the oven to 200 degrees while we prepare each of the breasts.
Place the chicken breasts on a kitchen board and with the help of a mallet or an element that serves to crush them until they are very thin, about 2 cm wide. Once you have them all stretched out, place the slices of Serrano ham on each of them longitudinally along each of the breasts.
Next, add a few slices of sandwich cheese. With Edam sandwich cheese they are very juicy. Once we have the cheese placed, with the help of a knife we cut several small pieces of blue cheese, and we also put it on top. It will be the center of our chicken wrap and the one that gives it all the flavor.
If you don't like blue cheese, you can try making them with tetilla cheese or a Manchego cheese that you like, because they are also delicious.
Once we have all the cheeses on, we then open our tin of roasted piquillo peppers, and cut them into strips. We are also placing them on the chicken breasts.
Carefully, we are rolling up the breasts and so that nothing escapes from the inside, we hold them with the help of some toothpicks until we form a roll with each one of them.
We prepare an oven tray, and we are placing each one of the breasts in it. In a bowl, we add about 6 tablespoons of olive oil, a little salt and pepper, and with the help of a brush we paint each one of the rolls.
Bake the chicken breasts at 200 degrees for 30 minutes. You will see that after that time they are well golden on the outside and juicy on the inside. Now, all you have to do is wait for them to cool down a bit and make each of the rolls in small cylinders and accompany your chicken breasts with whatever you like best. Mashed potatoes, salad, fried or baked potatoes. You choose!
