Filled party cookies

Preparation

1. We heat the oven to 210ºC. Meanwhile, soften the butter in the microwave and place it in a large bowl with the sugar, egg white, lemon juice, salt and flour. We knead the previous mixture with our hands until we reach a softened mass. Put it in the fridge and let it rest for 1 hour.

2. Once ready, we extend the dough on a smooth and clean floured surface until obtaining a thickness of approximately 4 millimeters. We cut the dough into discs, or with Christmas tree-shaped cookie cutters, stars... whatever we want. Some bad ones, help yourself from the mouth of a glass.

3. In half of the cut cookies, we make mini holes with the help of something cylindrical or the tip of a knife or mini-cutters, which are also available for these purposes. The rest of the cut dough we leave without piercing.

4. We take future cookies to an oven tray lined with parchment or parchment paper and cook for 10-12 minutes or until golden (be careful not to burn). We make batches, continue baking until the dough runs out. Remove from the oven and let cool on a wire rack.

5. We cover the cookies that do not have holes with jam of different flavors or nocilla and place the ones that do have them on top, previously dusted with icing sugar (so as not to stain the filling).

6. We serve.
