As many of you will know, fajitas are one of the traditional dishes of Tex-Mex cuisine, that is, the gastronomy created by Mexican immigrants living in the US state of Texas. The recipe consists of a sautéed or grilled chopped meat served on a corn flour tortilla and accompanied by vegetables. Originally fajitas were made only with beef, but today, as has happened with other international dishes, they are also made with chicken or pork. As a garnish, the guacamole, pico de gallo or cheese, either in sauce or grated.

Preparation

We start by cutting the vegetables into a not too fine julienne. Likewise, we cut the meat into strips.
In a large frying pan, sauté the vegetables with a background of olive oil and well seasoned.
On the other hand, we brown the meat in oil and also season it. When it is veal, like the vegetables, we add both sautéed and we spice them. Sauté a few minutes so that they take the flavor.
Heat the pancakes in a large frying pan on the fire without any oil and lightly brown them on both sides. We fill them with the meat, roll them up and serve them with the sauce or the chosen mince.
