Did you prepare our fresh pasta? How did you do? In this recipe we challenge you to prepare a succulent and tasty filling of minced meat, ham and mortadella and, apart, to shape the pasta into a tortellini, for which skill is worth more than strength.

Preparation
In a frying pan, melt the butter and brown the minced meat.
While the meat is cooking, chop the ham and mortadella manually or in a processor.
Mix the meat with the ham, the bologna, the Parmesan, the nutmeg and the egg and knead with your hands until everything is well compact. Season with salt and add a little pepper.
We stretch the homemade pasta, if we see it thick, so that it is thin and cut it into squares of about four centimeters on each side.
Place a small ball of filling on top of each square of pasta, fold it into a triangle, pressing the edges well so that they stick together (if the pasta has dried a bit, moisten the edges with a little water).
We support the paste on the index finger with the tip of the triangle facing up and we help ourselves with the other hand to join the two vertices of the base through the finger, with a little pressure and turning slightly downwards, trying to make the edges stick good. Gently remove the tortellino from your finger and place it on a floured surface.
Boil the pasta in broth or salted water and season to taste.
