How to take advantage of stale bread or the day before?

If the day before we bought too much bread and today it is already hard, we will not throw it away for the world. Many dishes that require bread come out much better if we prepare it with the hard, which with the crisis comes in handy to save money.

With remains of bread cut into cubes we can make the classic fried or baked croutons to accompany soups and creams. If we cut it into slices, the bread can serve as a base for bruschettas or mini pizzas. Yes, baked.

On the other hand, if we grate it and add garlic and parsley, we already have a crispy gratin or one more ingredient to give consistency to the dough for the meatballs.

We give you another easy recipe. A cake with ham and mozzarella. We cover the base of a greased mold with slices of bread dipped in milk. On top we have slices of mozzarella and a top one of ham. We cover with another layer of wet bread. Cover the cake with a mixture of eggs beaten with salt, pepper, nutmeg and Parmesan cheese. We bake the cake at about 200 degrees for about 20 minutes or until the eggs are set and the cake is golden brown.

And finally, another bread cake or bread pudding but this time sweet. In a pastry mold we put a liter of whole milk and add 250 grams of stale bread cut into small pieces. We make a mixture with 100 grams of sugar, a beaten egg, the zest of a lemon and 50 grams of chopped almonds. We bind these ingredients with the bread mixture. Finally, we spread 50 grams of butter in pieces on the cake. Bake at 180 degrees for about 45 minutes or until the dough is golden brown and consistent. Let cool and sprinkle with sugar or caramel.

PS: We do not forget the classic Spanish recipes with stale bread such as gazpacho, the Castilian soup or the migas ...
