Chicken salad with yogurt sauce. Very light.

Prepare one chicken salad as the image is simple and hardly requires time if we have roast chicken leftovers. It has escarole, tomato, chicken and apple.

It is a starter or a light accompaniment because we are going to season it with a plain yogurt sauce. Take note of the sauce because it can be used for any type of salad. Of course, use unsweetened yogurt.

As I said before, I have used a few pieces of roast chicken that I had left over yesterday. If you don't have it, you can always replace it with cooked ham. It won't be a chicken salad but it will also be very tasty.

Ingredients

• 80 g endive
• 1 Tomate
• 100 g of roast chicken
• Manzana 1
• 1 natural yogurt (125 g)
• 1 or 2 tablespoons of extra virgin olive oil
• Dried aromatic herbs

Preparation

1. Wash and dry the escarole. Chop it up and put it in a bowl.

2. Wash and dry the tomato. Chop it up and add it to the escarole.

3. We prepare the chicken.

4. Chop it up and add it to the bowl.

5. This is the apple we are going to use.

6. Peel the apple, chop it and add it to the bowl.

7. In a small bowl we put the yogurt. Also dry herbs and salt.

8. We mix.

9. We put all the yogurt sauce on our salad.

10. We mix everything well.

11. We serve.
