This recipe is made with great passion and honoring the color and potential of red wine. It is a delicious dish for all ages since the alcohol evaporates completely when cooked, but it will leave us that character together with the softness of the chicken meat. Chicken with red wine sauce

Ingredients
- Half chicken, chopped
- 2 small onions
- 4 cloves of garlic
- A quarter of a green pepper
- 200 ml of red wine
- 200g home-style fried tomato (no veggies)
- A handful of small pickled chives
- A bay leaf
- A splash of olive oil
- Sal Island
- A large potato for frying
- Oil for frying the potato
Preparation
- In a somewhat wide casserole we add a drizzle of oil to fry the chicken. We will place the chicken on the surface of the pan very clean, chopped and with its salt. We are going to fry it over medium-high heat until all the pieces are browned.
- We cut onion and green pepper In small pieces, we add it to the casserole, we lower the heat and we are going to sauté everything together little by little.
- In a mortar we put the four cloves of garlic and we grind them. We put them in the casserole and wrap it with the rest. We let it cook for a minute.
- We add tomato sauce and red wine and bay leaf. We stir everything well and let it cook over medium-low heat for about 15 minutes .. A couple of minutes before we add chives to cook. We rectify salt if necessary.
- We peel and cut into squares the potato. We put it in the hot oil and fry them until golden. We set aside.
- At the time of serving, we add the necessary chicken pieces with their juices and we will accompany it with the french fries.
