This dish is a great idea to prepare some healthy chickpeas without fat and make it a vegetarian recipe. We will cook the mushrooms with a large sauce and add it to the previously cooked chickpeas. The idea is a great proposal, since it ends with an original, different flavor and with a flavor that will surprise you.

Chickpeas cooked with mushrooms

Ingredients
- 250 g chickpeas
- 200 g of assorted mushrooms
- 1 liter of cooked broth
- half an onion
- 2 cloves of garlic
- 1 tablespoon sweet paprika (optional hot or smoked)
- 100 ml of aceite oliva
- salt, pepper, parsley and 1 bay leaf
Preparation
- We put a night before chickpeas over a bowl and covered with water. The we will soakr all night to cook them the next day.
- At the time of cooking them we will place them on a casserole, together with the stew broth and the bay leaf. Let it cook for 1 hour.
- In a pan add olive oil. Wash and finely chop the onion with garlic cloves. Let it cool down and add the mushrooms, paprika and chopped parsley. We let everything cook and without stopping to stir around 3 minutes.
- We mix the sofrito next to the casserole where do we have the chickpeas. We put everything to cook for 10 minutes so that all the flavors are integrated. Season with salt and pepper if necessary. Serve hot with a few sprigs of parsley.
