Today it's time to rest from copious meals with a rather light cream made with mushrooms. The must-have ingredients here are mushrooms, leeks, and potatoes. We will put homemade meat broth, specifically chicken.
It's great for dinner and it won't take long to make it. You can serve it with toast, as seen in the pictures. I leave you the link to a special bread in case you want to prepare it at home: aromatic herb bread.
Cream of mushroom soup with chicken broth
A great mushroom cream for young and old.

Ingredients
- 300 g of mushrooms
- 60 g leek
- 20 g of extra virgin olive oil
- 200 g of potato (weight once peeled)
- Between 500 and 700 g of chicken broth
- Aromatic herbs
- Pepper
- Sal Island
Preparation
We clean the leek and cut it into slices.
We clean the mushrooms and chop them too.
We put the oil in a saucepan and sauté the leek first.
Then, after a few minutes, add the chopped mushroom.
We peel the potatoes, cut them into fine pieces and also add them to the saucepan.
After a few minutes we add the chicken broth, first 500 g will be enough so we reserve the rest.
Add the aromatic herbs and let all the ingredients cook well (about 25 minutes will be enough).
Once cooked, we blend everything with a blender or with a food processor, adding a little more broth if we consider that the cream has been too thick.
We adjust the salt and serve with toasted bread.
