Once you put the cookies in the oven, don't get lost. in solo 10 or 15 minutes they are usually ready.

Ingredients
- 180 butter g
- 100 g of sugar
- 1 egg yolk
- 300 g of flour (270 + 30)
- 15 g cocoa powder
- a little egg white
Preparation
Put 180g of butter and sugar in a bowl. We left it for a few minutes at room temperature.
After a while, we added the egg yolk.
Mix with a fork.
We reserve 30 grams of flour. In a large bowl, mix the 270 g of flour with the mixture of butter, sugar and egg.
We will end up mixing everything well with our hands, until we form a ball of dough.
We divided that ball into two portions. To one portion we add the cocoa powder. To the other portion we added the 30 grams of flour that we had reserved.
We integrate well.
Roll out both portions of dough with the help of a rolling pin and using two sheets of baking paper.
Paint one of the dough sheets with the egg white.
We place the other plate on top, using the baking paper to make it easier for us.
We press both overlapping masses with the roller.
We cut what will be the cookies. I have made them in a diamond shape.
We are putting them on a tray on baking paper, leaving space between them.
