Ingredients
- A kilo of stale bread, approximately
- Some water
- Peppers
- 6 cloves of garlic
- Olive oil
- 1 blood sausage
- 1 chorizo (about 80 grams)
- 1 piece of bacon
- 6 eggs
- 150 g cherry tomatoes
Preparation
Chop the bread and put it in a large bowl.
We hydrate it (if we consider it necessary) with a few drops of water. Add the paprika, which can be sweet or spicy.
We mix and reserve.
In a frying pan, add the olive oil and the garlic cloves. Let cook for a few minutes.
Add the black pudding, chorizo and bacon, chopped. We redo well.
We remove all these ingredients from the pan and leave the oil in the pan itself. We remove the sausage to a colander, putting a bowl below. The oil is released, we put it back in the pan.
Sauté the bread in that frying pan or saucepan, with the oil that we have recovered.
When the bread has lost volume, when it has taken on the flavor of the oil, add the sausage and garlic that we have reserved to the pan.
We mix well.
We fry the eggs in oil. We wash the cherry tomatoes and cut them into halves.
We serve our migas with a fried egg and a few bits of cherry tomatoes.
