Do you like artichokes? Today we are going to do it with pasta and with some anchovies. You'll see how good they look.
We will clean the artichokes as always, removing the internal beard (if they have it) and we will cut them into slices. We are going to cook them in the pan itself where then we will finish making the dish so choose a large one and, if possible, with a lid.
If you have leftover artichokes you can prepare them fried and with this apple pate… A show.

Pasta with artichokes and anchovies
A different pasta dish, made with artichokes and anchovies. Full of flavor and properties.

Ingredients
- 2 artichokes
- 1 lemon wedge or a few sprigs of parsley
- Extra virgin olive oil
- 2 cloves of garlic
- 5 anchovies in oil
- 320 g of short pasta
Preparation
We put water in a saucepan to cook the pasta.
We clean and cut the artichokes, the thin slices.
We wash them and soak them, with water and a lemon wedge or with a few sprigs of parsley.
In a wide frying pan we put the oil. When it is hot we add the garlic cloves.
Next we add the artichokes without water, drained.
Sauté them for a few minutes and add a little water to the pan (little, it does not have to cover the artichokes completely). We put the lid on and let them cook over low heat, until there is hardly any water left in the pan.
We take advantage of that time to cook the pasta. When the water in the saucepan is boiling, add a little salt and add our pasta. We let it cook for the time indicated on the package.
We return to the artichokes. Once they are cooked, remove the garlic cloves.
We add the anchovies, in pieces and add salt if we consider it necessary.
Once the pasta is cooked, drain it slightly and add it to the pan to mix it with the cooked artichokes.
We cook everything in the pan for a few more minutes and we have it ready to take to the table.
