The heat has arrived and we are in the mood for lighter and fresher recipes. Here is a simple cold recipe for pasta with yogurt. You can present it as a first course or as a garnish for grilled meat or fish.
It is important that you prepare the pasta in advance and that you stop cooking by putting it under cold water. Then we will only have to prepare the yogurt sauce and mix everything when we go to bring it to the table.
Yogurts can be Greek or normal. Of course, make sure they are natural and not sugary.

- 500 gr. fresh pasta
- 2 unsweetened plain or Greek yogurts
- The grated skin of 1 lemon
- Sal Island
- Pepper
- Olive oil
- Herbs (chives, mint, basil ...)
- We prepare the fresh pasta.
- We boil it in plenty of salty water.
- It will take a few minutes for it to be done.
- Once cooked, drain it and put it under a stream of cold water. We reserve it in a bowl and let it cool.
- Meanwhile, we put the yogurt in a bowl or container.
- Add the grated lemon peel (only the yellow part).
- Also freshly ground pepper.
- And the aromatic herbs that we have chosen, well chopped.
- We add a splash of extra virgin olive oil and salt.
- Mix well and keep in the refrigerator until serving time.
- When the pasta is cold, we mix it with our yogurt sauce.
- We serve immediately.
