La piccata make reference to a type of Italian sauce in which steaks of meat or fish are cooked. It is usually composed of some herbs (parsley, basil ...) chopped, lemon juice and butter. The piccata brighten up the taste and presentation of chicken or turkey breast and grilled hake and salmon fillets.

Ingredients

  • finely cut chicken breast fillets
  • white wine
  • lemon juice
  • fresh parsley
  • flour
  • capers
  • butter
  • olive oil
  • shawl

Preparation

  1. Once we have the filleted chicken, we crush the meat well and salt it.

  2. We pass the fillets through a little flour. Heat a frying pan with a bottom of butter and/or oil. When it melts, we brown the chicken on both sides.

  3. Then, we add a splash of wine and let the alcohol evaporate over medium-high heat.

  4. Squeeze the lemon juice over the fillets (we put a strainer so that neither the pulp nor the seeds do not fall out), sprinkle with freshly chopped fresh parsley, a few capers and season with salt and pepper. To soften the sauce more, we can add a little water or more butter.

  5. Cook the sauce for a few minutes so that the chicken takes its flavor and serve immediately.

  6. We can make another type of piccata with olives, basil and another type of wine or liquor (vermouth, beer), orange juice and even adding other extra ingredients such as crushed anchovies.
