La bolzanina sauce It is made with hard boiled eggs. With it you can accompany your favorite vegetables. It not only has eggs, but also mustard, chives ... and it is prepared in no time without using a mixer.
You can use it to replace the Mayonnaise, surely you will surprise everyone very pleasantly. With these potatoes with skin, for example, you will only have to transform the boiled eggs in sauce and you will get a very original dish.

Ingredients
- 2 eggs
- 50 g of sunflower oil
- Chive
- Ground pepper
- 10g Dijon mustard
- 3g white wine vinegar
- Sal Island
Preparation
To cook the eggs we put them in a saucepan with water and place the saucepan on the fire. After 10 minutes from when the water starts to boil they will be cooked.
We cut the eggs in half and put the yolks in a colander. We put a bowl underneath and, with a spoon, we crumble the yolks.
Finely chop the whites using a board and knife.
We put the whites in the bowl where we have the yolks. We add the mustard.
Add the oil, wine, salt and pepper.
Add the chives and mix everything well.
On the other hand we prepare the asparagus, steaming them and then passing them through the iron.
We serve the asparagus still hot with the sauce that we have just prepared.
Notes
You can also grill asparagus directly, without previously steaming it.
