- 2 small cloves of garlic
- 1 small onion
- 1 small red bell pepper
- 1 small green bell pepper
- 1 egg to beat
- 6 boiled eggs
- 2 medium tomatoes
- 100 ml whole milk
- 1 tablespoon and a half of wheat flour (or cornstarch)
- 100 g grated mozzarella cheese
- 5-6 tablespoons olive oil
- Sal Island
- Ground black pepper
- 1 teaspoon oregano
- 1 teaspoon of chopped parsley
- 1 teaspoon sweet (or hot) paprika
- For, cook the eggs Place them in a small saucepan filled with water and a little salt. we leave them boil about 12 minutes. Remove, let cool and peel.
- Peel and cut into julienne onion, red pepper and green pepper.
- In a large, deep frying pan, pour the oil and heat it. While we chop the garlic in very small pieces and we add them. Let them fry just a few seconds and add all the vegetables.
- In a bowl, add the egg and beat it. We add the 100 ml of milk, the tablespoon and a half of wheat flour and a pinch of salt and black pepper. Stir well until all the ingredients dissolve.
- When the vegetables are well cooked pour the milk mixture and lower the fire. It has to be a medium low heat.
- We cut the sliced tomatoes and cut the eggs in half. In this layer we add two handfuls of grated cheese. Place the tomato slices on top of the mixture and a pinch of salt and oregano. We also distribute the halves of the eggs with the yolk below.
- On top of the eggs add the teaspoon of paprika and chopped parsley. We'll throw the grated cheese well spread and cover everything with a lid. With the heat generated inside it will cook all the ingredients and make them the cheese melts. We will leave it around 10 minutes cooking. Then we can serve them hot and we can taste this magnificent dish.
