Ingredients
- 1 whole chicken
- Olive oil
- 3 cloves of garlic

- A few tablespoons of vinegar

Preparation
We clean the chicken of any remains. We open it in half and salt it on both sides.
Prepare a tray that can go in the oven. Add a little olive oil to its base and place the chicken open and upside down. We cover it with a finger of water, we pour another little oil over the chicken.
We heat the 200 ° oven, with heat up and down and we put the tray with the chicken in the central part. Let it bake until golden brown.
We turn the chicken and we let it bake again, this time we will have to let it brown a little.
This step is when we add the crushed garlic in a mortar and we add the parsley shredded. We crush it all together. Pour a little water into the mortar and pour it over the chicken.
with the same bottle of vinegar we can pour a little on top, or add a few tablespoons on top.
We put it back in the oven, with a spoon we add a little of the sauce on top of the chicken and let it toast for a few minutes, letting the chicken brown together with the garlic. You have to be careful not to burn.
